The name of this wine refers to the now-extinct Champlain Sea, which covered our Mount Rougemont vineyards with brackish water some 10,000 years ago.
Aged on lees, in an egg-shaped concrete tank and in a stainless-steel vat, this bold Chardonnay exudes a distinctive freshness that comes from the abundance of shellfish fossils found in the local soil. The engaging bouquet of white-fleshed fruits is complemented by floral notes and a brilliant roundness.
The perfect wine for your aperitifs and to accompany ceviches with white fish and pan-fried scallops.
Serve chilled between 8°C and 10°C.
